私たちは農家ではない
植物を日々調理し扱う者として、
自ら扱う植物を育て、
植物の力について研究し、学び、
自ら効果を立証、体現し種を採取し、
自然循環を体験し学ぶことを主旨としている
この命と向き合わなければ、モノローグの料理は生まれない

この土地に古くから根付く在来種の果実や野菜
この土地で新たに根付き始めた固定種、自然交配種

種は命の源で
この土地の風土を代々記憶して引き継がれる命そのもの

私たちはその生命力にただ圧倒され
多くを学び、恵みを分け与えられ、そして再び命を繋ぐ者
自然の循環の一部に寄り添い暮らしているだけなんだと

私たちが育てているのは大地そのもの
野菜を育てるとは、
それらが根付く豊かな大地を守ることで
たくさんの微生物や酵素が生きた生命力溢れる大地を引き継ぐことでもある
農薬は使わない 化学肥料も使わない
それらが必要ない大地を創る為に日々モノローグに耳を傾けて暮らしている

野菜は新鮮で美味しいだけではないその生き様から生まれる
生命力と力強い息吹を感じてもらいたい
そこから生まれた料理は、それらモノローグの表現でもある
